Ingredients
- 1 Tablespoon Oil
- 2 whole Large Potatoes, Washed, Dried And Diced
- 1/2 whole Onion, Diced
- 2 cans Black Beans, 14.5 Oz Can, Drained And Rinsed
- 1/2 teaspoons Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 5 whole Eggs, Beaten
- 1/2 cups Salsa
- 1 cup Monterey Jack Cheese, Shredded
Directions

1In a large skillet, heat oil over medium high heat.

2When hot, add the diced potatoes and onion.

3Cook until golden and potatoes are fork tender.

4Add the black beans, chili powder, cumin and salt.

5Stir together and cook for about 2 minutes to let the spices begin to toast in the pan.

6Make a well in the center of the pan and add the beaten eggs, using your spatula to stir and begin to scramble them.

7Once eggs begin to come together and solidify a bit, mix it all together.

8Heat until eggs are cooked to your liking.

9Stir in the salsa and then sprinkle 1 cup of cheese over the top.

10Turn off heat.

11Serve alone, or with additional shredded cheese, salsa, sour cream, hot peppers and corn tortillas for a portable and flavorful miga!
