Meatless Zucchini Casserole

Ingredients

  • 4 medium zucchini, sliced
  • 2 small onions, chopped
  • 3 Tbsp. oil
  • 1/2 c. bread cubes (seasoned ones are good)
  • 1/4 c. Parmesan cheese
  • 2 c. cottage cheese
  • 4 eggs, beaten
  • 1 tsp. Italian seasoning
  • a bit of dill
  • salt to taste

Directions

    Saute zucchini and onions in oil until tender.

    Remove from heat and add the rest of the ingredients, but add the eggs last. Place the mixture in a large casserole or two small ones (can be frozen well).

    Use buttered breadcrumbs over top of casserole and little chunks of Velveeta cheese too, if liked.

    Bake at 350° for 1/2 to 3/4 hour.
