  • 1/2 green pepper, finely chopped
  • 1 onion, small, finely chopped
  • 1 garlic clove, minced
  • 1/8 teaspoon thyme, ground
  • 1/8 teaspoon sage, ground
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red wine (or sherry)
  • 2 -3 ounces sharp cheddar cheese, grated
  • 1/2 lb ground beef (or meatloaf mix)
  • 1/2 lb breakfast sausage, the kind that comes in a roll (like Jimmy Dean)
  • 1 egg

Directions

    Saute onion and green pepper until almost soft; add garlic and saute for another 1-2 minutes; remove from heat and set aside.

    Combine meats and set aside.

    Beat the egg; add the spices, Worcestershire, and wine. Beat together.

    Add the onion mix to the egg mixture, stir together, and add to the meat. Incorporate well.

    Fold the cheese into the meat mixture.

    Place in greased 3-1/2 x 6 loaf pan and bake at 375° for 35-45 minutes.
