Ingredients

  • 3 eggs beaten
  • 1 cup mixed vegetables cooked, peas, green beans, carrots, corn
  • 1 can beef 7oz - 200gr, cooked
  • 1 tomato cut into cubes
  • 1/2 cup tomato sauce canned
  • 2 tablespoons fresh parsley chopped
  • 1 onion chopped
  • green pepper yellow &, chopped
  • salt
  • cayenne pepper
  • 2 tablespoons olive oil

Directions

    In a large pan heat the olive oil ( medium heat )and saute the onion and the peppers, for about 3 min.

    Add the mixed vegetables, tomato, tomato sauce, beef and simmer ( medium heat ) for about 3 min.

    Add the egg mixture, mix well, and simmer ( low heat) two more min.

    Season with salt and cayenne pepper and serve.
