- 1 lb. eggplant
- 1 small onion, grated
- 1 clove garlic
- 1/4 c. lemon juice
- 1 Tbsp. olive oil
- 1 tsp. salt
- 1/2 c. olive oil
- raw vegetables
Directions

1Wash eggplant.

2Cut into 1/2-inch cubes.

3In 1/2 cup olive oil, saute eggplant until tender. Drain.

4Place eggplant, onion, garlic, lemon juice, olive oil and salt in blender and blend on high speed until smooth. Serve with raw vegetables.

5Makes 2 cups.
