Mediterranean Lamb Pizza

  • 1 pkg (16 oz) pizza dough
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 1 lb ground lamb
  • 1/3 cup tomato paste
  • 2 None plum tomatoes, diced
  • 1/4 cup mint leaves, chopped, plus additional leaves for garnish
  • 1 cup grated mozzarella cheese
  • None None Greek yogurt, to serve

Directions

    Preheat the oven to 400°F. Lightly grease a large baking sheet.

    Heat oil in a large skillet on medium heat. Saute onion and garlic 2-3 mins, until tender. Add ground lamb; cook 5 mins, until well browned, breaking up lumps with back of spoon as lamb cooks. Set aside.

    Roll dough into a 15 x 10 inch rectangle. Spread with tomato paste. Top with the lamb mixture, tomatoes and mint. Sprinkle with grated cheese.

    Bake 20-25 mins, until pizza crust is golden. Cut into squares. Sprinkle with additional mint leaves. Serve topped with yogurt.
