Mediterranean Mini Quiches

Ingredients

  • 2 tbsp butter
  • 2 None medium onions, thinly sliced
  • 1.5 oz can anchovy fillets in oil, drained and chopped
  • 3.5 oz pitted black olives, chopped
  • 1/3 cup fresh flat-leaf parsley, finely chopped
  • 2 sheets frozen pie dough, thawed
  • 1.5 oz cheddar cheese, coarsely grated
  • 1 cup cream
  • 1/3 cup milk
  • 2 None eggs

Directions

    Preheat oven to 400°F. Grease a 12-cup muffin tray. Melt butter in a large frying pan over medium heat. Add onion and cook for 8-10 mins, or until golden. Remove from heat. Toss with anchovies, olives and parsley. Let cool for 5 mins.

    Meanwhile, cut out 12 - 3 inch discs from tart dough. Press 1 disc into each muffin hole. Distribute onion mixture between tart shells then top with cheese. Whisk remaining ingredients together then distribute between tart shells. Bake for 20-25 mins or until just set and golden. Let cool for 5 mins in pan then serve.
