  • 1-1/2 cup Low Sodium Vegetable Broth (or Stock)
  • 1 Small Yellow Onion, Thinly Sliced
  • 1/2 cups Frozen Chopped Spinach, Thawed And Drained
  • 1 teaspoon Oregano
  • 1 teaspoon Black Pepper
  • 15 ounces, weight Canned Chickpeas (Or Garbanzo Beans), Drained And Rinsed
  • 1 whole Lemon, Juice Only
  • Yogurt Or Sour Cream, For Garnish

Directions

    In a soup pot with a lid, add vegetable broth, onion, spinach, oregano, and black pepper. Stir gently. Cover and cook 8 minutes on medium heat.

    Add chickpeas and lemon juice, stir again gently. Cover and reduce heat to low and cook 12 additional minutes, stirring gently during cooking time.

    Serve in soup bowls piping hot and garnished with yogurt or sour cream. Enjoy!
