Ingredients

  • 8 ounces, weight Penne Pasta (short Tube Or Spiral)
  • 2 cups Baby Spinach, Chopped
  • 1/2 cups Sun-dried Tomatoes, Oil Packed Sliced
  • 3 Tablespoons Red Onion
  • 3 Tablespoons Kalamata Olives, Pitted, Chopped
  • 3 Tablespoons Pine Nuts, Lightly Toasted In Dry Pan
  • 1/4 teaspoons Salt
  • 6 ounces, weight Jar Marinated Artichoke Hearts, Undrained
  • 3/4 cups Feta Cheese Crumbles

Directions

    Cook pasta according to package directions, omitting salt and fat. Drain, rinse with cold water.

    Combine pasta, spinach and the next 5 ingredients in a large bowl.

    Drain artichoke hearts into the pasta mixture. Coarsely chop artichokes and add to pasta along with 1/2 cup feta and lightly toss.

    Sprinkle each serving with remaining feta cheese.
