  • 1 Tablespoon Butter, Unsalted
  • 1/2 Large Onion, Sliced
  • 2 cloves Garlic, Minced
  • 1/2 cups Dry White Wine
  • 1/2 cups Kalamata Olives, Pitted And Sliced
  • 1 Tablespoon Capers
  • 1 can (10 Oz. Size) Diced Tomatoes, Drained
  • Sea Salt And Pepper
  • 4 whole Tilapia Fillets
  • 1/2 whole Lemon

    In a large skillet, heat the butter over medium heat.

    Add the onions and saute for 5 minutes.

    Add garlic and cook for an additional 2 minutes.

    Onions should be nice and tender.

    Add wine, olives, capers, and tomatoes and simmer for 5 minutes.

    Dash some salt and pepper on each side of the fillets and add them to the center of the skillet.

    Cook the fillets for 6-8 minutes or until white and flaky; flip halfway through the cook time.

    Season to taste with more salt and pepper.

    Add squeezed lemon juice over the top of the fish when plating.
