  • 1 White Onion
  • 100 Grams Basil
  • 1/2 Red Pepper
  • 1/2 Green Pepper
  • 1 Large Lemon
  • 100 ml Olive Oil
  • 1 Small Ciabatta

    Prepare all ingredients and separate for ease when cooking.

    Tomatoes: de-seed (cut in Half And Scoop Out) Basil: Roughly Chop (Hold Back Some Pretty Leaves For Garnish) Lemon: Juice Fish: Cut Into Large Chunks Peppers: Batons Onions: Quatered, Sliced Ciabatta: Half (Legnthways)

    Add 1/4 Of Your Oil To A Frying Pan And Toss Peppers, Onion And Fish Until The Onions Just Start To Change Colour.

    Throw In All Of The Ingredients (But The Bread) And Toss Regulary Until The Fish Is Tender.

    Lightly Toast The Bread And Place It Centre Of The Plate, Cover 3/4s With Monkfish.
