Melon Mint Relish

Ingredients

  • 1/4 cup fresh lime juice
  • 2 tbsp light brown sugar
  • 4 cup diced mixed ripe melons
  • 1/3 cup finely diced red onion
  • 2 tbsp finely chopped candied ginger
  • 1/4 cup chopped fresh mint
  • 1 cucumber, peeled, seeded, and diced into 1/2 inch pieces
  • 2 to 4 jalapeno chilies, seeded and finely chopped (you can leave the seeds in for a spicier relish)

Directions

    Combine the lime juice and sugar in a bowl and stir or whisk until the sugar is dissolved.

    Add the remaining ingredients and gently toss to mix.

    Serve within a few hours of making.
