Ingredients
- 1/4 cup fresh lime juice
- 2 tbsp light brown sugar
- 4 cup diced mixed ripe melons
- 1/3 cup finely diced red onion
- 2 tbsp finely chopped candied ginger
- 1/4 cup chopped fresh mint
- 1 cucumber, peeled, seeded, and diced into 1/2 inch pieces
- 2 to 4 jalapeno chilies, seeded and finely chopped (you can leave the seeds in for a spicier relish)
Directions

1Combine the lime juice and sugar in a bowl and stir or whisk until the sugar is dissolved.

2Add the remaining ingredients and gently toss to mix.

3Serve within a few hours of making.
