Melon Mojito Slush

Ingredients
- 1 seedless watermelon (about 10 lbs)
- 1 cup fresh mint leaves
- 1 cup sugar
- 1 cup water
- 1 (12 ounce) can frozen limeade concentrate, thawed
- 2 cups light rum
- fresh mint sprig (to garnish)
Directions

1To make the watermelon punch bowl, remove thin slice from bottom of melon, allowing it to stand upright.

2Cut off the top of melon.

3Scoop out melon, leaving about 1 inch shell; reserve all melon.

4Turn melon bowl upside down in a large bowl to drain.

5Cover and chill.

6In a medium saucepan, combine mint leaves and sugar.

7Using back of wooden spoon, mash mint with sugar until leaves are bruised.

8Add water; bring to a boil stirring occasionally over medium heat.

9Reduce heat and simmer for 5 minutes.

10Remove from heat and let steep for 10 minutes, then strain.

11In food processor, puree melon in batches to a total of 10 cups of melon puree.

12Place puree in large bowl, add mint syrup, limeade and rum; stir.

13Pour into freezer containers and freeze overnight.

14Right before the party, scoop slush into hollowed out melon with a scoop for serving.
