Melon Mousse

  • 5 grams Gelatin powder
  • 2 tbsp Water
  • 200 grams Melon
  • 10 grams Granulated sugar
  • 1 tsp Lemon juice
  • 50 grams Plain yoghurt
  • 100 grams Heavy cream
  • 10 grams Granulated sugar

Directions

    Dissolve the gelatin in water in a double boiler.

    Puree the melon in a blender or food processor, and mix in the lemon juice and granulated sugar.

    Add the yoghurt and mix well.

    Add the gelatin from Step 1, and mix well until until it thickens, then leave it to cool.

    Add the granulated sugar marked to the heavy cream, and whip until soft peaks form.

    Stir it into the bowl from Step 4 in 2-3 batches.

    Pour the mixture into the mousse cups and leave in the fridge to harden.

    Top with chopped melon and mint to finish.
