- 1 cantaloupe
- 1 lime, juice of
- 2 red chili peppers, deseeded and finely chopped
- 1 tablespoon mint, finely chopped
- 1 red onion, finely chopped (optional)
Directions

1Peel the melon with a knife, cut in half and scoop the seeds out.

2Chop the flesh roughly and add the remaining ingredients, mix well.

3Leave for about half an hour to allow the flavours to combine.

4Serve with grilled white meats or fish.
