Ingredients

  • 1/2 cups Margarin Or Butter
  • 1 cup Granulated Sugar
  • 1 Egg
  • 2 teaspoons Vanilla
  • 1-1/2 cup Mashed Bananas
  • 1-1/2 cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt

Directions

    Cream margarine and sugar. Add egg and vanilla, beat thoroughly. Blend in bananas (I like to freeze 'em when they ripen before I can eat 'em, then defrost in the microwave for baking purposes).

    Combine flour, baking powder, baking soda, salt. Add to creamed mixture, mix well. Pour mixture into a regular-sized loaf pan.

    Bake at 350°F for 20-25 minutes. Hide from husband and kids so they don't get to devour the whole thing!

    Tip: To make this stuff over the top, sprinkle unbaked loaf with a cinammon/sugar/nut mixture.
