  • 5 c. tripe, well washed and trimmed
  • 3 c. canned hominy, drained
  • 6 qt. water
  • 2 onions, minced
  • 4 cloves garlic, crushed and roasted
  • 1 Tbsp. salt
  • 1 Tbsp. oregano
  • minced green onions with tops
  • peppery salsa

    Cut cleaned and thoroughly washed tripe into slices about 1-inch wide and cook 1 hour in a large pot with water.

    Add the hominy, onion, garlic, salt and oregano.

    Simmer 6 to 7 hours.
