- 3 c. canned hominy, drained
- 6 qt. water
- 2 onions, minced
- 4 cloves garlic, crushed and roasted
- 1 Tbsp. salt
- 1 Tbsp. oregano
- minced green onions with tops
- peppery salsa
Directions

1Cut cleaned and thoroughly washed tripe into slices about 1-inch wide and cook 1 hour in a large pot with water.

2Add the hominy, onion, garlic, salt and oregano.

3Simmer 6 to 7 hours.
