- 1 Tbsp. cornstarch
- 2 tsp. cold water
- 1/2 c. boiling water
- 1 tsp. fresh lemon juice
- 3 egg whites
- 6 Tbsp. sugar
Directions

1In small saucepan, mix cornstarch and cold water.

2Stir in boiling water put over medium heat.

3Cook over medium heat, stirring constantly, until thickened.

4Set in cool water to hasten cooling.

5Add lemon juice to egg whites and beat in electric mixer until whites stand in soft peaks.

6Gradually add sugar, beating well after addition, then beat until whites stand in glossy peaks. Add cornstarch mixture all at once and beat until well blended.
