- 1 prepared pie shell
- 1 1/4 c. sugar
- 1/2 c. water
- 3 eggs, separated
- 1/4 tsp. cream of tartar
- 6 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. mandarin juice
- 1 tsp. mandarin peel in syrup
- 6 Tbsp. sugar
Directions

1Combine cornstarch, sugar and salt in a saucepan.

2Stir in water and mandarin juice.

3Cook over medium heat, stirring constantly until mixture comes to a boil.

4Boil 1 minute, stirring. Reduce heat and cook 5 minutes more, stirring.

5Remove from heat. Beat egg yolks, gradually pour in small amount of hot mandarin mixture, stir.

6Mix remaining egg yolks with mandarin mixture.

7Add mandarin peel and butter, blending well.

8Cool 10 minutes and turn into baked pastry shell.

9Make meringue by combining 3 egg whites with cream of tartar, beat until frothy.

10Gradually beat in sugar 1 tablespoon at a time until egg whites are stiff and glossy.

11Spoon over filling in pastry shell, spreading so meringue touches edge of crust all around.

12Bake at 350° for 12 to 15 minutes or until meringue is golden brown.
