- 12 eggs
- 1/2 c. half and half
- 1 (11 oz.) can Mexicorn
- 10 (6-inch) soft corn tortillas, cut into quarters
- 4 oz. (1 c.) shredded Cheddar cheese or Jack cheese
- 2 c. salsa
- 1 c. sour cream
- 1 c. guacamole
Directions

1Grease 13 x 9-inch baking dish.

2Mix eggs and milk and beat slightly.

3Add corn.

4Place tortillas in bottom of greased dish. Pour egg mixture over tortillas.

5Sprinkle with cheese.

6Cover and refrigerate overnight.
