  • 2 cups V8 vegetable juice
  • 2 cups water
  • 12 teaspoon chili powder
  • 12 teaspoon cumin
  • 15 ounces black beans
  • 15 ounces corn
  • 12 cup salsa
  • 12 fresh tomato
  • tortilla chips

Directions

    Begin cooking 1 cup rice in 2 cups V-8 and 2 cups water with the chili powder and cumin.

    After 5 minutes add can of black beans.

    Wait five minutes and add the corn and salsa.

    Chop the tomato; add it when the rice is almost done cooking.

    Crumble tortilla chips on top if you want.
