Mexican Casserole Using Chicken

Ingredients

  • 1 large chicken, cooked, boned and cut into pieces
  • 2 c. grated Cheddar cheese
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 1/2 tsp. chili powder
  • garlic and salt to taste
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 (10 oz.) can Ro-Tel tomatoes, diced with chilies
  • 6 to 8 flour tortillas

Directions

    Layer tortillas and chicken alternately in greased casserole dish.

    Combine 1 cup of cheese with all other ingredients.

    Pour over chicken and sprinkle with remaining cheese.

    Bake at 350° for 30 to 45 minutes or until heated through and cheese is melted.
