- 10 ounces pepper jack cheese grated
- 1 onion medium

- 1 tablespoon flour
- 1 can tomato paste
- 1 cup whipping cream
Directions

1Cook the onions in what is preferably a teflon-coated cast-iron pot, until browning or even slighter burning.

2When the onions are acceptable, add the flour, garlic, cream, and tomato paste.

3When that becomes soft and hot, gradually add the cheese until bubbly.
