  • 4 large chicken breasts
  • 2 cans cream of chicken soup
  • 1 can Ro-Tel
  • 1 c. chopped green pepper
  • 1 c. chopped onion
  • 1 Tbsp. garlic powder
  • 1 Tbsp. chili powder
  • 1 c. grated Cheddar cheese
  • 1 large bag regular flavor corn chips or Tostitos

Directions

    Boil chicken and remove bone and skin. Mix together soup and next 5 ingredients and 1/2 cup of the cheese.

    Grease a 13 x 9 x 2-inch dish and line bottom with 1/2 cup of crushed chips.

    Mix chicken with soup mixture and pour on top of crushed chips.

    Bake at 350° for 30 to 45 minutes.

    Top with remaining chips and cheese.

    Return to oven until cheese is melted.
