Ingredients

  • 1 large or 2 small chickens (save broth)
  • 1 onion
  • 1 green pepper (celery, if you have it)
  • 1 Tbsp. chili powder
  • 1/2 tsp. garlic powder
  • 1 can cream of chicken soup
  • 1 can cream of mushroom or celery soup
  • 1 can Ro-Tel tomatoes
  • 1/2 lb. grated Cheddar cheese
  • 12 tortillas

Directions

    Boil the chicken, debone and chop.

    Saute the onion, green pepper and celery. Add onion, green pepper and seasonings to chopped chicken. Add soups.

    Mix well. Soak tortillas in chicken broth to soften them. Grease casserole dish lightly. Arrange layers of tortillas, chicken mixture alternately. Sprinkle grated cheese on top. Bake at 375° for 30 minutes.
