- 1 cut up fryer, salted and peppered
- 1/2 c. flour
- 1 Tbsp. chili powder
- 1/3 c. vegetable oil
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 (14 1/2 oz.) can tomatoes, chopped
- 1 clove garlic, chopped
- 1 c. uncooked rice
- 2 c. water
Directions

1Season chicken. Combine flour and chili powder.

2Dredge chicken in flour mixture and brown in hot oil.

3Remove chicken from skillet.

4Add onion, green pepper and garlic and saute until tender.

5Stir in rice, tomatoes and water.

6Arrange chicken over rice and vegetables; cover and simmer 35 minutes.
