  • 1 cut up fryer, salted and peppered
  • 1/2 c. flour
  • 1 Tbsp. chili powder
  • 1/3 c. vegetable oil
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 (14 1/2 oz.) can tomatoes, chopped
  • 1 clove garlic, chopped
  • 1 c. uncooked rice
  • 2 c. water

    Season chicken. Combine flour and chili powder.

    Dredge chicken in flour mixture and brown in hot oil.

    Remove chicken from skillet.

    Add onion, green pepper and garlic and saute until tender.

    Stir in rice, tomatoes and water.

    Arrange chicken over rice and vegetables; cover and simmer 35 minutes.
