Mexican "Corn" Bread

  • 2 1/2 c. self-rising meal
  • 1 1/4 c. self-rising flour
  • 4 eggs
  • 1 big spoon mayonnaise or salad dressing
  • 3 chopped green onions (all of it)
  • 1/2 diced red or green pepper
  • 2 hot red peppers, diced
  • 1 (15 oz.) can creamed corn
  • 1 c. frozen kernel corn
  • 4 oz. grated hot pepper cheese
  • 4 oz. grated Cheddar cheese
  • about 2 to 2 1/2 c. milk or buttermilk

Directions

    Stir all together and pour in large hot iron skillet that has melted bacon grease or shortening.

    Bake in preheated 450°

    oven for about 1 1/2 hours.
