Mexican Corn Bread

- 1 c. yellow cornmeal
- 2 eggs, well beaten
- 1 c. milk
- 1/2 tsp. soda
- 3/4 tsp. salt
- 1 can cream-style corn
- 1/2 c. bacon drippings
Directions

1Mix all these ingredients and set aside.

2Brown 1 pound of ground meat in skillet and drain.

3Grate 1/2 pound mild Cheddar cheese, 3 or 4 jalapeno peppers and 1 large onion (all finely chopped).

4In large well-greased pan, pour half of cornbread mix, then your ground meat, then your cheese, onion and peppers.

5Last, add your remaining cornbread mixture.

6Bake at 400° for approximately 45 minutes.
