Mexican Corn Bread

  • 1 c. yellow cornmeal
  • 2 eggs, well beaten
  • 1 c. milk
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1 can cream-style corn
  • 1/2 c. bacon drippings

Directions

    Mix all these ingredients and set aside.

    Brown 1 pound of ground meat in skillet and drain.

    Grate 1/2 pound mild Cheddar cheese, 3 or 4 jalapeno peppers and 1 large onion (all finely chopped).

    In large well-greased pan, pour half of cornbread mix, then your ground meat, then your cheese, onion and peppers.

    Last, add your remaining cornbread mixture.

    Bake at 400° for approximately 45 minutes.
