- 2 c. plain corn meal
- 1 c. flour
- 1 tsp. salt
- 1 Tbsp. sugar
- 1/2 tsp. pepper
- 2 Tbsp. baking powder
- 1/4 tsp. soda
- 1 medium can cream-style corn
- 1 onion, chopped
- 1 red mango
- 3 jalapeno peppers, chopped
- 3 eggs
- 1/2 stick butter, melted
- 8 oz. Cheddar cheese, shredded
- 1 c. sour cream or buttermilk
Directions

1Heat iron skillet.

2Add 1/4 cup of oil.

3Mix all ingredients except cheese.

4Pour half of mixture in heated skillet; cover with grated cheese.

5Pour rest of mixture on top and bake at 475° for 40 minutes or
