- 2 pkg. Mexican corn bread mix
- 2 eggs
- 1 c. milk
- 1 can creamed corn
- 1 1/2 lb. grated Cheddar cheese (mild or medium)
- 1/2 bell pepper, chopped
- 1/2 c. bacon drippings (use no cholesterol cooking oil)
- 1/2 lb. ground meat
- 1 large onion, chopped
Directions

1Mix corn bread mix, eggs, corn and oil and set aside.

2Brown meat and drain.

3Grease large iron skillet and heat.

4Sprinkle meal to brown.

5Pour batter on top.

6Sprinkle with cheese.

7Add meat, onions and pepper.

8Pour remaining batter on top and bake in oven until brown.
