Mexican Corn Bread

Ingredients

  • 2 c. corn meal
  • 1 c. flour
  • 4 tsp. baking powder
  • 4 tsp. salt
  • 3 eggs
  • 1 1/4 c. milk
  • 1 c. grated sharp cheese
  • 2/3 lb. browned ground meat (season to taste)
  • 2/3 lb. browned Owens Country sausage (regular)
  • 1 onion, cooked with meat
  • 1/4 c. bacon drippings
  • 1 can cream-style corn
  • 1 small can whole kernel corn
  • jalapeno peppers, chopped (don't add too many, it could really get hot!)

Directions

    Mix first 6 ingredients.

    Put bacon drippings in the bottom of a 9 x 13-inch pan; dust with corn meal and brown in oven.

    Mix all other ingredients with corn bread mixture; pour over bacon drippings and corn meal.

    Cook about 1 hour or until done.
