  • 2 eggs
  • 13 oz. can creamed corn
  • 3/4 c. milk
  • 1/2 c. bacon drippings or melted shortening
  • 1 box corn meal mix
  • 1 tsp. soda
  • 1 (4 oz.) can green chilies, chopped and drained
  • 1 small jar sliced pimentos
  • several chopped black olives
  • 1 1/2 c. shredded sharp Cheddar cheese

Directions

    Beat the eggs slightly in a mixing bowl.

    Add the remaining ingredients except for half the cheese.

    Mix well and pour into an 8 x 8-inch greased baking pan.

    Sprinkle with the remaining cheese.

    Bake for one hour at 350°.
