  • 1 lb. ground beef
  • 1 c. corn meal
  • 1 c. milk
  • 1/2 tsp. soda (in milk)
  • 3/4 tsp. salt
  • 1 large onion
  • 1/2 lb. sharp Cheddar
  • 2 eggs, well beaten
  • 1 can cream-style corn
  • 1/2 c. bacon drippings
  • 2 or 3 jalapeno peppers

    Brown ground beef; drain well.

    Mix together the ingredients listed.

    Pour half of batter in a big skillet.

    Layer meat and remaining corn bread mix.

    Bake slowly at 250° to 300° for 1 to 1 1/4 hours.
