Ingredients

  • 1 c. yellow corn meal
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1 c. sifted flour
  • 3 tsp. baking powder
  • 1 egg
  • 1/4 c. milk
  • 1/4 c. salad oil
  • 1 (No. 303) can cream-style corn
  • 1 c. cottage cheese
  • 1/2 lb. diced Longhorn cheese
  • 1 (4 oz.) can chopped green chili peppers, roasted and peeled

Directions

    Combine dry ingredients (corn meal, sugar, salt, flour and baking powder).

    Add the egg, milk, salad oil, corn and cottage cheese; stir lightly.

    Pour half of batter into a 9-inch square casserole (well-greased).

    Add the cheese and peppers.

    Pour rest of batter over this.

    Bake at 425° for 30 to 40 minutes, until golden on top.
