- 1 c. yellow corn meal
- 1/4 c. sugar
- 1 tsp. salt
- 1 c. sifted flour
- 3 tsp. baking powder
- 1 egg
- 1/4 c. milk
- 1/4 c. salad oil
- 1 (No. 303) can cream-style corn
- 1 c. cottage cheese
- 1/2 lb. diced Longhorn cheese
- 1 (4 oz.) can chopped green chili peppers, roasted and peeled
Directions

1Combine dry ingredients (corn meal, sugar, salt, flour and baking powder).

2Add the egg, milk, salad oil, corn and cottage cheese; stir lightly.

3Pour half of batter into a 9-inch square casserole (well-greased).

4Add the cheese and peppers.

5Pour rest of batter over this.

6Bake at 425° for 30 to 40 minutes, until golden on top.

7Serves 10 to 12.
