Mexican Corn Bread

  • 2 lb. ground beef
  • 1 c. creamed corn
  • 4 hot peppers
  • 1 c. corn meal
  • 8 oz. grated Cheddar cheese
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 2 beaten eggs
  • 1 c. buttermilk
  • 1/3 c. oil
  • 1 large chopped onion

Directions

    Brown beef, add onions, peppers and cheese. Sift meal, salt and soda.

    Combine sifted mixture with beaten eggs, milk, oil and corn.

    Pour 1/2 bread mixture in a deep greased skillet or Corning Ware dish.

    Add meat mixture, top with other 1/2 of bread mixture. Bake at 350° for 45 minutes.
