- 1 1/2 c. White Lily white self-rising corn meal
- 2 eggs or 4 egg whites
- 3/4 c. milk or skim
- 3/4 to 1 c. grated cheese or fat-free grated product
- 8 oz. cream-style corn
- 2 to 5 (1 fresh) jalapeno peppers, chopped
- 1 large white onion, chopped
- 3/4 c. oil or canola
Directions

1Mix all ingredients, beginning with eggs.

2Pour into a well-greased, hot iron skillet.

3Bake at 450° for approximately 40 minutes.

4Can be doubled or made fat-free/low cholesterol.
