  • 1 1/2 c. White Lily white self-rising corn meal
  • 2 eggs or 4 egg whites
  • 3/4 c. milk or skim
  • 3/4 to 1 c. grated cheese or fat-free grated product
  • 8 oz. cream-style corn
  • 2 to 5 (1 fresh) jalapeno peppers, chopped
  • 1 large white onion, chopped
  • 3/4 c. oil or canola

Directions

    Mix all ingredients, beginning with eggs.

    Pour into a well-greased, hot iron skillet.

    Bake at 450° for approximately 40 minutes.
