- 1 1/2 c. self-rising cornmeal
- 1/2 c. buttermilk
- 1/2 tsp. salt
- 1/2 bell pepper, chopped
- 1/2 onion, chopped
- 1 small can cream-style corn
- 3/4 c. hoop cheese, grated
- 2 Tbsp. oil
Directions

1Mix like corn bread the cornmeal, buttermilk, eggs and salt. Add bell pepper, onion and cream-style corn.

2Pour 1/2 batter in greased skillet (heated). Spread over skillet with spoon (wet to spread well). Add the cheese evenly over batter.

3Add the remaining batter on top of cheese, covering all with remaining cheese.

4Bake in a 350° oven for about 40 minutes.
