- 1 c. flour
- 1 c. corn meal
- 1/4 c. sugar (optional)
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. chili powder
- 2 eggs
- 1/2 c. milk
- 1/2 c. soft butter or margarine
- 1/4 c. finely diced green pepper
- 1/4 c. finely chopped onion
- 2 Tbsp. chopped pimentos
Directions

1Sift the flour, baking powder and salt into a large mixing bowl; stir in corn meal.

2Add eggs, milk, butter, green pepper, onion and pimentos.

3Beat vigorously with electric mixer or hand rotary beater until all ingredients are well mixed, about 1 minute.

4Turn into greased 8 x 8 x 2-inch pan.

5Bake at 425° for about 20 minutes.

6Makes 6 servings.

7Delicious served with creamed chicken.
