  • 1 c. yellow corn meal
  • 1/3 c. flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 eggs, beaten
  • 1 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 (8 3/4 oz.) can cream-style corn
  • 1/3 c. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1/2 c. shredded Cheddar cheese

Directions

    Combine first 6 ingredients; combine remaining ingredients and add to dry ingredients.

    Stir only until moistened.

    Pour into 9-inch square baking pan and bake at 350° for 30 to 35 minutes or until golden brown and tests done.
