  • 1/2 c. (1 stick) butter (room temperature)
  • 1/2 c. grated Monterey Jack cheese
  • 1/2 c. grated mild Cheddar cheese
  • 1/2 c. sugar
  • 4 eggs
  • 1 can green chilies (4 oz.), chopped
  • 1 (16 oz.) cream corn
  • 1 c. flour
  • 1 c. yellow corn meal
  • 4 tsp. baking powder
  • 1/4 tsp. salt

    Grease and flour a 9 x 13-inch pan. Cream 1/2 cup butter with sugar until light and fluffy.
