- 1 1/2 c. yellow corn meal
- 1 Tbsp. baking powder
- 1 tsp. salt
- 2 eggs
- 2/3 c. vegetable oil
- 1 c. buttermilk
- 3 jalapenos, seeded and chopped
- 1 (16 oz.) can cream-style corn
- 1 c. grated sharp cheese
Directions

1Preheat the oven to 350°.

2Grease an 11 x 8-inch baking dish. Mix all ingredients in order listed, except cheese.

3Pour half the batter into prepared pan.

4Top with half the cheese.

5Add the rest of the batter and cover with remaining cheese. Bake at 350° for 45 minutes.

6Serves 10 to 12.
