Mexican Corn Bread

  • 1 c. cornmeal
  • 2 eggs, beaten
  • 1 c. milk
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1/2 c. cooking oil
  • 1 can creamed corn
  • 1 1/2 lb. hamburger
  • 1 onion, diced
  • 1 1/2 to 2 tsp. dried red pepper flakes to taste or 2 to 3 jalapeno peppers to taste (take out seeds and chop fine)
  • 1/2 to 1 lb. grated mild or sharp Cheddar cheese

Directions

    Mix cornmeal, eggs, milk, baking soda, salt, cooking oil and creamed corn together; set aside.

    Brown the following: hamburger, onion and dried red pepper flakes or jalapeno peppers. Take off heat and add Cheddar cheese.
