  • 1 1/2 c. corn meal (self-rising)
  • 1 c. sour cream
  • 1 c. cream-style corn
  • 1 Tbsp. chopped bell pepper
  • 1 c. grated Cheddar cheese
  • 2/3 c. oil
  • 2 eggs
  • 2 jalapeno peppers, finely chopped
  • 1 small bunch green onions, chopped

Directions

    Mix all ingredients except cheese together.

    Grease iron skillet and pour in half mixture.

    Sprinkle half of shredded cheese.

    Pour remaining mixture in; top with remaining cheese. Bake at 350° for about 40 minutes.
