Chicken Mandarin

Ingredients
- 2 1/2 to 3 lb. chicken pieces
- 1/4 c. flour
- 2 Tbsp. margarine
- 2 Tbsp. oil
- 4 Tbsp. lemon juice
- 1/2 c. orange juice
- 2 Tbsp. honey
- 1/2 Tbsp. soy sauce
- 1/2 tsp. powdered ginger
- 11 oz. can mandarin oranges, with juice
Directions

1Wash and dry chicken pieces.

2Shake in a paper bag with flour to coat.

3In a skillet, heat oil and margarine.

4Add chicken and brown each piece.

5Drain mandarin oranges and set aside.

6Mix juice from the can with the lemon juice, orange juice, honey, soy sauce and ginger.

7Pour sauce over the chicken in skillet.

8Cover and simmer for 30 minutes or until tender.

9Add mandarin orange sections for 5 to 10 minutes before chicken is done.

10Serve with rice.
