- 3 eggs
- 1/2 c. vegetable oil
- 1/2 c. flour
- 1 c. yellow corn meal
- 1/2 tsp. soda
- 1 c. buttermilk
- 1 c. cream-style corn
- 1 large onion, chopped
- 2 jalapeno peppers, chopped
- 1/2 large green pepper, chopped
- 1 c. shredded Cheddar cheese
Directions

1Combine eggs and oil in a medium mixing bowl; beat well.

2Sift together dry ingredients; add to oil mixture, along with buttermilk.

3Stir well.

4Add remaining ingredients, stirring well. Pour batter into a well-greased baking pan.

5Bake at 450° for 30 minutes or until the center is firm.

6Cut into squares.
