  • 4 eggs
  • 1 large can creamed corn
  • 1 large onion, chopped
  • 3/4 c. oil
  • 2 to 2 1/2 c. self-rising corn meal
  • 2 Tbsp. (rounded) chopped green chilies
  • 6 slices cheese

Directions

    Mix eggs, corn, oil, onion, chilies and corn meal.

    Add enough water to make the batter thin enough to spread in a 9 x 13-inch baking pan that has been greased and floured.

    Pour 1/2 of the batter in the pan and then place the 6 slices of cheese on the batter.

    Pour the remaining mixture to cover the cheese completely.

    Cook at 375° until golden brown.
