Mexican Corn Bread

  • 1 1/2 c. yellow corn meal (self-rising)
  • 3/4 c. milk
  • 1/4 c. salad oil (use to grease pan)
  • 3/4 lb. Cheddar cheese, shredded
  • 1 onion
  • 2 eggs, beaten
  • 1 (8 oz.) can cream-style corn
  • 3/4 lb. ground beef
  • 2 to 3 jalapeno peppers, chopped

Directions

    Combine corn meal, milk, eggs and corn in a mixing bowl. Blend well and set aside.

    Brown ground beef and drain.

    Set aside.

    Pour 1/2 of corn meal batter into a greased 12 x 9 x 2-inch pan.

    Sprinkle with cheese and crumble beef over cheese. Sprinkle with onion and peppers.

    Pour remaining corn meal over top.

    Bake at 425° for 30 minutes.
