Mexican Corn Bread

- 1 1/2 c. yellow corn meal (self-rising)
- 3/4 c. milk
- 1/4 c. salad oil (use to grease pan)
- 3/4 lb. Cheddar cheese, shredded
- 1 onion
- 2 eggs, beaten
- 1 (8 oz.) can cream-style corn
- 3/4 lb. ground beef
- 2 to 3 jalapeno peppers, chopped
Directions

1Combine corn meal, milk, eggs and corn in a mixing bowl. Blend well and set aside.

2Brown ground beef and drain.

3Set aside.

4Pour 1/2 of corn meal batter into a greased 12 x 9 x 2-inch pan.

5Sprinkle with cheese and crumble beef over cheese. Sprinkle with onion and peppers.

6Pour remaining corn meal over top.

7Bake at 425° for 30 minutes.

8Serves 6.
