  • 1 1/2 c. self-rising cornmeal
  • 3 eggs, beaten
  • 1 c. buttermilk
  • 1 medium onion, chopped fine
  • 1 medium sweet pepper, chopped fine
  • 1 small can cream-style corn
  • 2/3 c. oil
  • 1 crushed hot pepper to taste
  • 8 oz. shredded Cheddar cheese
  • salt to taste

Directions

    Grease and flour a large skillet.

    Mix all together except cheese.

    Pour half of batter in skillet, then sprinkle cheese over top.

    Pour rest of batter in.

    Bake at 400° for 40 to 45 minutes or until golden brown.
