- 1 1/2 c. self-rising cornmeal
- 3 eggs, beaten
- 1 c. buttermilk
- 1 medium onion, chopped fine
- 1 medium sweet pepper, chopped fine
- 1 small can cream-style corn
- 2/3 c. oil
- 1 crushed hot pepper to taste
- 8 oz. shredded Cheddar cheese
- salt to taste
Directions

1Grease and flour a large skillet.

2Mix all together except cheese.

3Pour half of batter in skillet, then sprinkle cheese over top.

4Pour rest of batter in.

5Bake at 400° for 40 to 45 minutes or until golden brown.
