Mexican Corn Bread

  • 1 c. corn meal
  • 1 c. buttermilk
  • 2 eggs
  • 1/4 c. bacon drippings
  • 3/4 tsp. soda
  • 1/2 tsp. salt (optional)
  • 1 medium onion, chopped
  • 1 1/2 jalapeno peppers (optional)
  • 1/2 can cream-style corn (3/4 is better)
  • 1/2 lb. grated cheese (3/4 is better)

Directions

    Mix all, except cheese.

    Pour 1/2 in large iron skillet that has been greased and heated.

    Sprinkle 1/2 cheese over it, then add rest of batter.

    Sprinkle rest of cheese on top.

    Bake as corn bread in a 400° oven until brown.
