Mexican Corn Bread

- 1 c. corn meal
- 1 c. buttermilk
- 2 eggs
- 1/4 c. bacon drippings
- 3/4 tsp. soda
- 1/2 tsp. salt (optional)
- 1 medium onion, chopped
- 1 1/2 jalapeno peppers (optional)
- 1/2 can cream-style corn (3/4 is better)
- 1/2 lb. grated cheese (3/4 is better)
Directions

1Mix all, except cheese.

2Pour 1/2 in large iron skillet that has been greased and heated.

3Sprinkle 1/2 cheese over it, then add rest of batter.

4Sprinkle rest of cheese on top.

5Bake as corn bread in a 400° oven until brown.
