  • 3 c. corn meal (self-rising)
  • 1 lb. grated Cheddar cheese (sharp)
  • 1 (12 oz.) can Green Giant Mexicorn
  • chopped jalapeno peppers to taste
  • chopped onion (large)
  • 16 oz. sour cream
  • 3 large eggs
  • oil
  • milk

Directions

    Mix eggs, oil, sour cream and corn; add peppers and onion. Stir in meal gradually adding milk for desired thickness, then add cheese, mixing thoroughly.

    Bake in preheated oven at 350° until golden brown.

    Serve with chili or by itself.
